Job Description
The Sous Chef position reports directly to the Executive Chef of Culinary Services. Responsibilities include training of the kitchen production staff, day to day management of kitchen production staff, as well as menu planning and development. The Sous Chef coordinates food preparation, production, and food purchasing with the assistance of the unit Production Managers. Assists the unit management team and the Executive Chef in supervising food production for the venues (i.e. Shively Court, Nelson Court, and West Green Market District). Supervises food production personnel, assists with food production tasks as needed and ensures that quality and cost standards are consistently attained. Trains food service staff in production, preparation, and garnishing techniques.
Minimum Qualifications
-ServSafe certification must be obtained within 1 year of employment.
-Minimum of 3 years of relevant work experience, minimum of 1 year of supervisory or managerial experience, or an equivalent combination of education and experience.
-Must have a solid base knowledge of food production, presentation, recipe development, cultural cuisines, vegetarian and vegan cuisines, and be keenly aware of new trends and directions in the food service industry. Ability to read and interpret documents such as recipes, safety rules, operating instructions, and procedure manuals; ability to write routine reports and correspondence; ability to speak effectively before groups of customers or employees.
-Working knowledge of concepts, practices and procedures and ability to use in varied situations.
-This position requires excellent customer service skills.
-This position requires standing in kitchens for long periods of time.
-May be exposed to hot/cold temperatures at times.
